Take me out to the ball game...

So as I understand it during the summer a bunch folks go out and sit in the heat and watch a bunch of guys swing a stick at a ball and run around in a diamond shape..... This is my basic understanding and appreciation of baseball.

I have tried but it has never been a sport that I got into.  However I love making baseball themed cookies.  The mascots are so much fun and the colors are vibrant.  I was even more thrilled when I was asked to make some baseball cookies for a soldier serving overseas.


  His sister said that my cookies reminded her of some that a neighbor use to make for her and her brother.  The cookies their neighbor made for them made such a lasting impression they still talk about them today (and they are grown and have kids of their own)


I was lucky enough to get an e-mail from the recipient of my cookies.  Here is what he had to say:

My sister,sent me a box of your cookies on behalf of my nephew.   They arrived delicious and intact, all the way to the Kingdom of Bahrain!  Great work on the Pittsburgh Pirates design, it has helped lift my spirits as a long deployment nears the end.  Good luck in all your business endeavors.

I am so touched that he took the time to write to me and super happy that all the cookies made it intact.  I was worried about the bills of the hats breaking off.

Love is in the air...part two

Like I said in my previous post.  Love is in the air, between weddings, engagements and 1st anniversaries and new babies this summer has been full of love.


I made this cookie bouquet for an awesome couple.  They are both amazing people and very talented artists.   Stevie is the stunning photographer behind http://www.stevietphotography.com/ and her hubby Tony is the brilliant carpenter behind http://www.dylandesigncompany.com/ 


Not only are they talented artists but they are wonderfully thoughtful and giving people.  In fact they met during the shooting of Extreme Home Makeover where Tony was a carpenter for the show.



They are a happy loving couple that radiates both of those feelings to those around them.  It is hard to be standing next to either one of them and not be smiling.



I wanted to make them some cookies that conveyed the same happiness that they exude, and this is what I came up with.



Congratulations Stevie and Tony, you are both amazing people and an extra amazing couple.  I hope you have many wonderful years together and keep on spreading your happiness and love!

삼계탕 Sam Gye Tang: Korean Chicken and Ginseng Soup

I thought I would take a break from posting sweets and share with you one of my favorite Korean foods:



During my 3 years in Korea I learned a lot of wonderful things....and some strange things that no matter how hard I tried I couldn't get use to.  One of those things was eating hot food when it was crazy hot out.  The idea was that you would feel cooler after eating something hot because it was closer to the temperature outside.  I however just felt extra hot and sweaty.  That being said I will eat 삼계탕 (sam gye tang) no matter the weather just because I like it sooo much.
Mr. Lee's mom would frequently make it when I came to visit the house.  I was close to 90 degrees inside but let me tell you that didn't stop me from enjoying this delicious soup.
It is a fairly easy soup to make, and I have adapted it a bit so I am able to make it in the U.S.

For 2 servings you will need:
2 Cornish game hens
8 dried dates (jujube's)
2 pieces of ginseng root (or ginseng powder)
6-8 cloves of garlic
1-2 cups of sweet rice partially cooked
Green onion (garnish)
Water
Salt and Pepper
Tooth picks
Optional: Sam gye tang soup package

Before even starting to make the soup you are going to want to soak your rice.  1st wash is till the water runs clear then let it soak for 4 hours.... or at least this is what most recipes will tell you.  I have never had much luck using the rice this way.  I find the Cornish game hens cook too quickly (because of their size) and the rice doesn't have enough time to cook.  Instead I cook the rice about half way and let it cool and then use it to make 삼계탕.

If you have a Korean market near you, you could pick up one of these lovely soup seasoning packages.  I have made 삼계탕 with it and with out it and it tastes great both ways.  If you do have the soup flavoring package add the contents to some water and let it boil for about 10 min. 




While your water is boiling you can get the rest of your ingredients ready.  Here I have my sweet rice jujube's and garlic ready to go to stuff the game hens  


Before stuffing the game hens you will want to wash them off, and trim off as much fat as you can and be sure the inside cavity is nice and clean.  After washing the chickens pat them dry and close up the smaller opening (by the neck) with tooth picks. 


Turn your birds over and fill with rice garlic and jujube's.  I like to put 3 jujube's inside and 2-3 cloves of garlic and then leave the rest to add to the broth. 


Once filled close up the opening with more tooth picks.

Put your hen in a large pot and fill with water, I never fully cover the bird because then you end up with a weaker flavored broth.  At this time if you used a flavoring package remove all the pieces (leave the ginseng root and jujube) If not using a flavor package add your additional jujube's and garlic as well as some ginseng powder to flavor the broth (you can make the broth without ginseng but it isn't quite as good)

Bring the soup to a boil and skim off any fat/foam that forms on the surface.  Once foam stops forming add a little salt and pepper and cover the pot with a lid.  Cook until the meat is just about to fall off the bone.  




Garnish with thinly chopped green onion and a side of salt for dipping the meat into.  Kimchi and pickled daikon radish are great side dishes with sam gye tang.  


Be sure to remove the tooth picks before serving or let your guests know that they are there.  Crack open the hen and mix the rice with the broth and dip the chicken into your dish of salt eat and enjoy!

Love is in the air

It seems like this summer has been full of love.



Friends getting marred, engaged or celebrating their 1st. anniversaries.  And let me tell you I love, love.  I love making loved themed cookies because they can be frilly and cute and I get to use a lot of brushed embroidery.... or at least that's how I tackle the loved themed cookie.  


This basket was made for a client last minute.  She contacted me on a Tuesday and said she would need a basket by Friday morning. 

Normally I don't take last minute orders but this was for her 1st anniversary and she was surprising her hubby at work and wanted something special to bring him.  I couldn't turn her down, so I frantically designed some cookies, cut them out and decorated them in the span of one day.  I think I work rather well under pressure if I do say so myself.

Summer time cookies

Summer is finally here, sunny weather, beautiful flowers, warm breezes and butterfly's.


These cookies were made as a thank you gift for some very special teachers and volunteers right before summer vacation began.


These wonderful women devote their time to teaching the next generation.  I was lucky enough to work along side them throughout the school year as a volunteer for the Read 180 program.  This program helps students who are reading below grad level catch up.


I was part of a similar program when I was in the second grad and thanks to dedicated teachers I was reading at a college level before I entered high school. I was privileged enough to work with some awesome 5th graders and thanks to the dedication of their wonderful teachers and volunteers I think many of them will be reading at grade level by the time they start the 6th grade!


Be sure you take the time today to think about a special teacher that changed your life, and if you are able to go out there and thank them.  I am so grateful for all my educators did for me and what they continue to do in the world today.  These sweets are for all the educators out there!  Thank you for all you do!

1st Birthday Cookies for Lincoln


I love making cookies, my favorite type to make are birthday cookies, especially cookies for kids.  They are a lot of fun and really let me be creative.  They also allow me to keep things simple.  These cookies were made last minute for a friend's son, for his 1st birthday. I really enjoy how versatile my cupcake cookie cutter is.  Cupcakes are good for all occasions!


I could see these cookies being great for anyone's birthday not just a 1st birthday.  Maybe for a friend who isn't wild about cake but loves cookies (there are people out there that don't like cake.... believe me.... I happen to be one of them)



Maybe you just want to surprise someone special to you but don't know exactly when you will be seeing them.  A cupcake cookie is perfect for that!  They keep much longer than cupcakes and are just as cute (in my opinion at least)


This same set could be made with a variety of numbers on the round cookies or just leave them with dots...maybe a little heart or star in the middle.  


In the end, these cookies were for a very special little boys birthday.  Happy Birthday Lincoln!  You are a sweet little boy and I can't wait to see you grow up into a wonderful young man.

Welcome Home!

There is nothing more exciting than moving into a new house, especially when it is your 1st house!



These cookies were made as a gift for a few friends who have just recently moved into their 1st house.  


The cookies were a huge hit at the housewarming party.  Do you know anyone who is moving?  



How sweet would it be to show up to there place with a platter full of housewarming cookies, so much sweeter and easier to care for than a house plant ;)
